Seasonal/High Altitude


The challenges of high altitude food preparation have puzzled cooks living at higher altitudes since the early pioneers pushed westward. Although many foods pose few problems, most recipes for baked goods and other foods developed at sea level (which include almost every cookbook, newspaper and magazine recipe) can present not only food quality challenges, but also food safety challenges for cooks living above 3,500 feet.
